Lego Brownies

While party planning can be incredibly stressful it doesn’t have to be! If your kids are anything like mine, they always want their birthday party to have a theme! So whenever their birthdays come around we always go all out and have absolutely everything following that theme! If it’s a mermaid theme we have mermaid costumes, mermaid food, mermaid cups and plates, mermaid bunting etc (you get the idea.) Some themes are incredibly easy such as pirates, unicorns, dinos and fairies but a few trickier ones I’ve stumbled across are tennis, Lego and sloths!

Lego began as a childhood favourite all the way back in the 1950s and it is still as popular today! The Lego Movie took Lego from being a simple toy that you would give as a birthday present, to a pretty popular party theme! Those colourful blocks bring up some creative menu ideas but some of them are rather tricky!  So having a little one who loves Lego and someone who also wants a Lego party seems super cool until you try to create Lego inspired food! But saying that I found this really simple Lego brownie recipe that I thought I’d share with you just in case you find yourself in the same dilemma as me!

Ingredients:

  • 125g (4¼ oz) butter
  • 200g (7 oz) caster sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 5 tablespoons good quality cocoa powder
  • 60g (2¼ oz) plain flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Method:

  1. Preheat oven to 180 C / Gas mark 4. Grease and flour a 20cm square baking tin.
  2. In a large saucepan, melt 125g butter. Remove from heat, and stir in sugar, eggs and 1 teaspoon vanilla. Beat in 5 tablespoons cocoa, 50g flour, salt and baking powder. Spread batter into prepared tin.
  3. Bake in preheated oven for 25 to 30 minutes. Do not overcook.

Decorating:

  1. Grab yourself a pack of smarties and some coloured frosting!
  2. Decorate each brownie square with different coloured frosting (red, yellow, green, orange, blue)
  3. Then add 6 coloured smarties to the brownie square to create the chocolate brownie Lego pieces!

And there you have it – yummy lego bakes in no time at all!!!!
